My Spotted Dick is famous!

The new Irish Country Magazine is out today, I haven’t seen it yet but if you are visiting my blog here from having seen a mention of myself tweeting and picnicking within its glossy pages, I bid you welcome and hope you enjoy my blog.

Irish food - irish spot o dick

If you liked the look of my ‘spot o dick’ (which is a scone mixture and it makes a fabulous fruit bread) within the picnic feature, here’s the recipe:

Spotted Dick or Spot o’ Dick

1 lb plain flour

4 oz margarine

4 oz sugar

2 teasp bextartar

1 teasp baking powder

1 egg

6 oz sultanas/raisin mix

half a pint buttermilk

Sieve the flour etc into a large bowl and mix all the dry ingredients with the margarine until they look like breadcrumbs. Then add the raisins/sultanas until they are dispersed. Add the egg and the buttermilk, mixing with a broadbladed knife, roll with your hands into a circular shape and pop in the oven for 25-25 minutes at 200 Celsius.

Absolutely gorgeous for tea with real Irish butter and homemade jam or clotted cream and jam. ?I have also posted my recipe for clotted cream if you would like to have a go.

    So excited for you Lorna! It seems to be a wonderful magazine and I’m sure you’ll get even more traffic on your great blog. And thanks so much for sharing the recipe. Anytime I buy something here in the states called “scone” I take a real chance on whether or not it is edible. Always better to get it from a real cook, like you.

    Lovely Lorna! My 2 claims to fame in the baking department are scones (Delia) and brown bread (Nora, my mother) – I never thought of making the scones into a cake – must do so next time. You’re picnic table is a very appealing! Yum!
